I thought someone told me when we took our first cruise in 1997 that the soda charges were new, but apparently that was incorrect. Interesting that Celebrity is throwing in all those freebies. We sailed them in late 2012 and they didn’t offer us squat, even with all the problems we had on that sailing.

They weren’t unbundled in the 1990’s as they were never part of the bundle. As an example, sodas and alcohol were a separate charge on Norwegian in 1979, when I was on board as a teenager. Some lines let you have soda at meal time without an extra charge, but that was rare.

More recently, premium or luxury lines have moved to (or started with) a more all-inclusive model that includes drinks (Azamara Club, etc.) but on the mainstream lines only Disney has included soda and Disney is not exactly mainstream.

Experimentation on pricing is rampant in the industry though. Norwegian’s Freestyle cruising is often seen as a way to drive more people into specialty restaurants for an up charge. All lines have added specialty restaurants and others are also experimenting with room service charges (paying extra for certain items, for example). Royal was even offering a better steak in the MDR for an upcharge too.

Some are de facto rebundling. You can hardly go on a Celebrity cruise without them offering the drinks package as a freebie.
