I think you describe the KLM product spot on. The friendly and warm crew usually make up for the less fancy catering options. Actually the club sandwich you showed is a Europe Y class sandwich… I also find crew more and more hit or miss over the last years and encountered exactly the same on their 787 with the crew being very loud. I prefer AF nowadays. Where l used to find their crews not very consistentent in the past, over the last years I have excellent experiences with them. Yes, more formal and distant, but polite and exemplary.
